Healthy Chicken Nugget Recipe!
Chicken Nuggets made with Almond flour/meal: These are a huge hit at my house, not to mention jam packed with a TON of PROTEIN!!
1 package of organic or natural (no hormones/antibiotics added) chicken strips
Cut each strip into small pieces
Toss chicken pieces in 1 whole beaten egg (or egg whites can be used)
Toss egg covered chicken in a container with 1-2 Cups Almond meal/flour, coating each piece completely. You may need more or less depending on how many nuggets you're preparing.
Place nuggets in frying pan with 1/2- 3/4 inches of Olive Oil that has been heating in advance. Fry nuggets for about 3-5 minutes per side, or until golden brown.
DO NOT heat Olive Oil higher than medium heat, about a 4-5 on a stove dial. Heating Olive Oil any higher will destroy the oil's triglyceride chains mutating them and won't be any better for you than a crap oil such as vegetable/canola etc.
When finished place them on plate with a paper towel to absorb any excess oil.
